7. Character: It is white powder, odorless. Its solubility is 50.8 g/100 mL (25 ºC). It is soluble in water, but insoluble in alcohol, with strong hygroscopicity. The aqueous solution is strongly alkaline.

Usages: In food industry, it is used as emulsifier, potassium reinforcing agent, flavoring agent, meat binder, preparation of pasta products with alkali water; It is also used in the production of liquid soap and high-quality paper; It can be used as boiler softener; It is also used in medicine
