Application
Folk often use licorice powder as a flavoring agent to give food a sweet taste and unique flavor, such as making licorice olive, licorice ginger and other spice dried fruits. Licorice extract can be used in canning processing and doubles as a spice. China's hygienic standard for the use of food additives (GB 2760) stipulates that the use of licorice is canned food, seasonings, candies, biscuits, and secret money (Cantonese preserved fruit), and the amount of use is not limited.
Glycyrrhizin is a low-calorie sweetener that has a different sweetness than sucrose, i.e., glycyrrhizin responds later to sweet stimuli, and sucrose earlier. The time for glycyrrhizin to produce sweet stimulation is about the same as that of salt, so when glycyrrhizin and salt are used together, it can buffer the saltiness of food with high salt content, so that the taste is not too salty, and produce a round and soft sense of ambiguity, so glycyrrhizin is suitable for the seasoning of pickled foods, such as the combination of glycyrrhizin and salt and monosodium glutamate, in addition to improving the seasoning effect, it can also save the amount of monosodium glutamate. Glycyrrhizin and saccharin are mixed in a ratio of 3~4:1, and then combined with sucrose and sodium citrate for food, and the sweetening effect is better.
Glycyrrhizin has a strong masking property and can mask the bitterness in foods.
Glycyrrhizin also has a certain milk-emulsifying effect in water, such as when mixed with sucrose, egg white, etc., it can form a delicate and stable foam, which is suitable for making soft drinks, candies, pastries and beer. Glycyrrhizin is insoluble in fat, so when used in fat (such as cream, chocolate), some measures should be taken to disperse it evenly. Glycyrrhizin also has a strong flavoring effect, which is very effective when used in dairy, chocolate, egg products and beverages
